Ingredients

Eggs
  • 6 large pasture-raised eggs cold from the fridge
Marinade
  • 1/2 cup coconut aminos
  • 1/2 cup water
  • 1 tbsp rice vinegar
  • 3 garlic cloves grated
  • 1 tbsp fresh ginger grated
  • 2 scallions thinly sliced
  • 1 fresh red chili sliced, or 1/2 tsp red pepper flakes
  • 1 tsp toasted sesame seeds

Method

  1. Bring a pot of water to a gentle boil. Lower the cold eggs in with a spoon and cook for exactly 6 1/2 minutes.
  2. Move the eggs straight into a bowl of ice water for 5 minutes, then peel carefully.
  3. Stir together the coconut aminos, water, rice vinegar, garlic, ginger, scallions, chili and sesame seeds in a jar.
  4. Add the peeled eggs, making sure they're covered. Refrigerate at least 4 hours or overnight.
  5. Slice in half and spoon a little marinade with the scallions over the top to serve.

Notes

Marinate at least 4 hours. Total time does not include marinating.
