Ingredients

The 5 ingredients
  • 4 fillets (6 oz) wild salmon skin on, patted dry
  • 4 baby bok choy halved lengthwise
  • 2 inch fresh ginger finely grated
  • 1 bunch scallions thinly sliced
  • 1/4 cup coconut aminos
Pantry
  • 3 tbsp avocado oil divided
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes
  • 3/4 tsp sea salt
  • 1/4 tsp black pepper

Method

  1. Season the salmon with the garlic powder, 1/2 tsp salt and the pepper.
  2. Heat 1 tbsp avocado oil in a large skillet over medium-high heat. Add the salmon skin side down and press gently for 10 seconds. Cook 5 to 6 minutes until the skin is crisp, then flip and cook 1 to 2 minutes more. Move to plates.
  3. Add 1 tbsp oil and the bok choy cut side down with a pinch of salt. Cook 2 to 3 minutes until charred, then flip for 1 minute. Move to the plates.
  4. Lower the heat to medium. Add the last 1 tbsp oil, the ginger, most of the scallions and the chili. Sizzle for 30 seconds.
  5. Pour in the coconut aminos and simmer 30 to 60 seconds until slightly glossy. Spoon over the salmon and bok choy and top with the rest of the scallions.
