Ingredients

  • 2 shots espresso or 1/2 cup strong brewed coffee
  • 1 cup whole milk or 2% milk
  • 2 tbsp pumpkin puree 100% pure pumpkin, not pie filling
  • 1 tbsp pure maple syrup
  • 1/2 tsp pumpkin pie spice or 1/4 tsp cinnamon, 1/8 tsp ginger and a pinch each of nutmeg and clove
  • 1/4 tsp vanilla extract
  • 1 tiny pinch sea salt
  • 1 pinch ground cinnamon for dusting

Method

  1. Brew the espresso or strong coffee and pour it into a large mug.
  2. In a small saucepan over medium heat, whisk together the milk, pumpkin puree, maple syrup, pumpkin pie spice and salt. Heat for 3 to 4 minutes, whisking often, until steaming with small bubbles at the edge. Don't let it boil.
  3. Take the pan off the heat and whisk in the vanilla. Froth with a handheld frother, or whisk hard for 30 seconds until foamy.
  4. Pour the pumpkin milk over the espresso, spoon the foam on top and dust with cinnamon.
  5. Iced version: whisk the milk, pumpkin, maple, spice, vanilla and salt together cold, shake in a jar, pour over ice and top with the cooled espresso.
