Ingredients

  • 1 tsp ghee or butter
  • 1/2 tsp cumin seeds
  • 1/4 small red onion finely chopped
  • 1 green chili finely chopped, seeded for less heat
  • 1/2 tsp fresh ginger grated
  • 1/2 small tomato finely chopped
  • 1/4 tsp ground turmeric
  • 1 pinch chili powder
  • 1/4 tsp sea salt
  • 3 large pasture-raised eggs beaten
  • 1 tbsp fresh cilantro chopped
  • 1 wedge lime
  • 1 slice sprouted grain or sourdough bread toasted

Method

  1. Heat the ghee in a small skillet over medium heat. Add the cumin seeds and let them sizzle for 20 seconds.
  2. Add the onion, green chili and ginger and cook for 1 minute, stirring.
  3. Add the tomato, turmeric, chili powder and salt and cook for 1 minute more, until the tomato softens.
  4. Pour in the eggs. Stir gently with a spatula for 1 to 2 minutes until soft curds form. Pull the pan off the heat while they still look a little wet.
  5. Top with cilantro and a squeeze of lime. Serve on the toast.
