Ingredients

The 5 ingredients
  • 1 lb large wild shrimp peeled and deveined, patted dry
  • 2 cups cherry tomatoes
  • 5 garlic cloves thinly sliced
  • 5 oz baby spinach
  • 1 lemon zested and juiced
Pantry
  • 1 tbsp extra virgin olive oil
  • 2 tbsp butter
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp red pepper flakes
  • 3/4 tsp sea salt
  • 1/4 tsp black pepper freshly cracked

Method

  1. Toss the shrimp with the smoked paprika, garlic powder, half the red pepper flakes, 1/2 tsp salt and the pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the tomatoes and cook for 3 to 4 minutes, shaking the pan, until blistered and starting to burst. Push them to the side.
  3. Add the shrimp in one layer and sear for 1 minute per side until pink.
  4. Lower the heat to medium. Add the butter and sliced garlic and stir for 30 to 60 seconds until fragrant and golden.
  5. Add the spinach and the rest of the salt and chili. Toss until just wilted, about 1 minute.
  6. Turn off the heat, add the lemon zest and juice, and serve right away.
