Cinnamon Apple Baked Oatmeal
One pan of cinnamon apple baked oatmeal gives you 6 warm fall breakfasts, about 15g protein each.

The short answer: This apple baked oatmeal turns rolled oats, eggs, milk and two apples into 6 breakfasts in one pan. Each square has about 15g of protein and tastes like apple pie, thanks to cinnamon, ginger, nutmeg and a little maple.
It’s 6:45 AM and you have 4 minutes before you need to be out the door. Instead of skipping breakfast or grabbing a pastry, you cut a warm square from the pan you baked on Sunday. That’s the whole plan.
It’s one of the meals from our guide to clean eating on a budget, and it’s built the Clean Fit Fab way: real food, big flavor, and no seed oils.
Why this apple baked oatmeal works on tired nights
- Oats are one of the cheapest whole grains. A big canister lasts for weeks.
- One pan, six breakfasts. Bake once and you’re set from Monday to Saturday.
- It actually holds you. Eggs and Greek yogurt add protein, and the oats add fiber.
- Apples are in season. Fall is when they’re cheapest and taste best.
Oats bring a soluble fiber called beta-glucan, which may help you feel full. The Harvard Nutrition Source guide to oats covers what makes them such a solid staple.
The flavor: what makes it taste so good
Baked oatmeal can taste like wet cardboard. Not this one. Butter-toasted apples, a full spoon of cinnamon, fresh ginger and a pinch of nutmeg make the whole kitchen smell like fall.
- Ceylon or regular cinnamon, plus ground ginger and nutmeg
- Apples sauteed in butter first, so they caramelize
- Vanilla and a pinch of sea salt to make the sweetness pop
- Toasted walnuts or pecans for crunch
What you need
Here’s a quick look at the ingredients. Exact amounts are in the recipe card below.
- Apples: butter, apples, ground cinnamon, ground ginger, ground nutmeg
- Oatmeal: eggs, milk, plain Greek yogurt, pure maple syrup, vanilla extract, baking powder, sea salt, old-fashioned rolled oats, walnuts
Also, a note on fat: we cook with extra virgin olive oil, avocado oil, butter or ghee. They taste better, and they’re real food.
