You want sizzling fajitas, but standing over a skillet in batches is not happening tonight. So the oven does the work while you change clothes. Like every dinner in this set, it uses five main ingredients. Oil, salt, pepper and dried spices don’t count, because they already live in your kitchen.

It’s one of the meals from our guide to 5-ingredient clean dinners, and it’s built the Clean Fit Fab way: real food, big flavor, and no seed oils.

Why these sheet pan chicken fajitas work on tired nights

  • One pan, one cleanup. Everything roasts together.
  • Thighs stay juicy. They forgive a few extra minutes in a hot oven.
  • The spice mix is from scratch. It takes one minute and you skip the packet.
  • Lime at the end makes it pop. It tastes bright, not heavy.

Colorful peppers bring vitamin C and fiber to the plate. The Harvard Nutrition Source on vegetables covers why a full half plate of them is worth it.

The flavor: what makes it taste so good

Fajitas live or die by the seasoning. So we stack smoky, earthy and warm spices, then let the hot oven char the edges of the peppers and onion.

  • Cumin and chili powder for that classic fajita base
  • Smoked paprika for a grill-like smoke
  • Garlic powder and dried Mexican oregano
  • Fresh lime and cilantro to finish

What you need

Here’s a quick look at the ingredients. Exact amounts are in the recipe card below.

  • The 5 ingredients: boneless skinless chicken thighs, bell peppers, red onion, limes, fresh cilantro
  • Pantry: avocado oil, ground cumin, chili powder, smoked paprika, garlic powder, dried Mexican oregano, sea salt, black pepper

Also, a note on fat: we cook with extra virgin olive oil, avocado oil, butter or ghee. They taste better, and they’re real food.

How to make sheet pan chicken fajitas

Swaps and variations

  • Use shrimp and roast it for the last 6 minutes only.
  • Swap chicken for sliced flank steak.
  • Add a sliced jalapeno to the pan for more heat.
  • Top with a spoon of plain Greek yogurt instead of sour cream.

Make-ahead and storage tips

Leftover fajitas keep for up to 4 days in the fridge. Reheat them in a hot skillet or the air fryer for 3 to 4 minutes so the peppers stay a little crisp.

Frequently asked questions

Can I use chicken breast for sheet pan chicken fajitas?

Yes. Slice it thin and check it at 15 to 18 minutes, because breast dries out faster than thighs.

Why do my fajita vegetables get soggy?

The pan is too crowded. Spread everything in one layer, or use two sheet pans, so it roasts instead of steams.

What tortillas should I use?

Look for cassava, sprouted grain or almond flour tortillas made with olive or avocado oil. Lettuce cups work too.
