Chewy Blackstrap Molasses Ginger Cookies
Chewy, deeply spiced molasses ginger cookies made with blackstrap molasses, fresh ginger, real butter and oat flour. Around 1 mg of iron per cookie.

The short answer
These molasses ginger cookies are chewy, dark and spiced with fresh ginger, cinnamon and cloves. Blackstrap molasses is the secret: many labels list about 20 percent of the Daily Value for iron per tablespoon, so each cookie brings close to 1 mg. They take about 25 minutes, start to finish.

It’s 9 PM, the kitchen is finally quiet, and you want something sweet that isn’t a sad protein bar. These are the cookies you make instead: crackly on top, soft in the middle, and smelling like a holiday.
It’s one of the meals from our guide to iron rich foods that taste like dessert, and it’s built the Clean Fit Fab way: real food, big flavor, and no seed oils.
Why these molasses ginger cookies work on tired nights
- Blackstrap molasses pulls double duty. It’s the darkest, least sweet molasses, and it’s where the minerals concentrate.
- Oat flour keeps them tender. Whole grain, no refined white flour, and you can grind it from rolled oats.
- Real butter, real sugar, small amounts. Coconut sugar and molasses sweeten them without a sugar bomb.
- One bowl, 25 minutes. No chilling, no mixer, no fuss.
Molasses iron is the non-heme kind, which your body absorbs best alongside vitamin C. The NIH Office of Dietary Supplements explains how to pair plant iron with fruit and vegetables to get more from it.
The flavor: what makes it taste so good
Store-bought ginger snaps taste like cardboard next to these. Blackstrap has a bitter, almost smoky depth, so we balance it with fresh grated ginger, plenty of cinnamon, cloves, black pepper and orange zest.
- Fresh grated ginger plus ground ginger for a double hit
- Cinnamon, cloves, nutmeg and a pinch of black pepper
- Orange zest to brighten the molasses
- Flaky salt on top so every bite tastes bigger

Serving ideas
Let them cool for 10 minutes so the centers set. Then serve with a glass of fresh orange juice or a bowl of sliced strawberries, because vitamin C helps your body take up the iron in the molasses.

Swaps and variations
- Use whole wheat pastry flour instead of oat flour if that’s what you have.
- Add 1/2 cup chopped crystallized ginger for extra chew.
- Swap half the butter for tahini for a nutty, even higher-mineral cookie.
- Press a square of dark chocolate on top of each cookie as they come out of the oven.
Make-ahead and storage tips
Store the cooled cookies in a sealed container at room temperature for 5 days. The dough balls also freeze well for 2 months, so you can bake three molasses ginger cookies at a time straight from frozen with 2 extra minutes.
Frequently asked questions
Why blackstrap molasses instead of regular molasses?
Blackstrap is the third boiling of sugar cane syrup, so it has less sugar and far more minerals, including iron. It’s more bitter, which the ginger and orange balance.
How much iron is in one cookie?
Roughly 1 mg from the molasses alone, depending on your brand. That’s a small bonus, not a supplement, so enjoy them as a treat with real meals.
Can I make them gluten-free?
Yes. Use certified gluten-free oat flour and check your baking soda. The texture stays chewy.
Why did my cookies spread flat?
The butter was too hot when you mixed it. Let the melted butter cool for 5 minutes, and chill the dough balls for 10 minutes if your kitchen is warm.
