Loaded Sweet Potatoes with Cumin Black Beans and Lime Crema

Sweet potatoes baked on prep day, loaded with cumin black beans, cheese, pickled onion and lime crema.

loaded sweet potatoes

The short answer: These loaded sweet potatoes come together in 10 minutes on a busy night because you bake the potatoes on prep day. Reheat them in the oven or air fryer, then fill with garlicky cumin black beans, cheese, pickled onion and a Greek yogurt lime crema.

Sweet potatoes are the ultimate tired-night food, as long as you bake them ahead. Do a tray on Sunday and you have the base for dinner all week.

It’s one of the meals from our guide to what to eat when you’re too tired to cook, and it’s built the Clean Fit Fab way: real food, big flavor, and no seed oils.

Why these loaded sweet potatoes work on tired nights

  • Bake once, eat all week. A tray of sweet potatoes keeps for 5 days.
  • The beans are seasoned like a taqueria. Garlic, cumin and smoked paprika.
  • Greek yogurt crema adds protein. And it’s tangier than sour cream.
  • Fiber all day. Sweet potatoes and beans together are seriously filling.

Sweet potatoes are a whole-food carb with fiber and color. The Harvard Nutrition Source on fiber explains why fiber-rich foods like these keep you full.

The flavor: what makes it taste so good

Sweet potatoes love smoke, spice and acid. So the beans get cumin, smoked paprika and garlic, the onions get a quick lime pickle, and the crema brings cool, tangy contrast.

  • Cumin, smoked paprika and garlic in the beans
  • Quick-pickled red onion with lime and salt
  • Greek yogurt crema with lime zest and garlic
  • Cilantro, jalapeno and crumbled cotija
  • A pinch of chili powder on the potato

What you need

Here’s a quick look at the ingredients. Exact amounts are in the recipe card below.

  • Potatoes: sweet potatoes, avocado oil, sea salt
  • Cumin black beans: avocado oil, garlic cloves, ground cumin, smoked paprika, chili powder, black beans, water, sea salt
  • Pickled onion: red onion, lime, sea salt
  • Lime crema: plain Greek yogurt, lime, garlic clove, sea salt
  • Toppings: cotija or feta, cilantro, jalapeno

Also, a note on fat: we cook with extra virgin olive oil, avocado oil, butter or ghee. They taste better, and they’re real food.
