Crispy black bean quesadillas with cumin, chipotle, garlic and real cheese, plus a 3-minute pico de gallo.

black bean quesadillas

The short answer: These black bean quesadillas take 15 minutes and bring about 22g of protein each. Mash black beans with garlic, cumin and chipotle, layer with real sharp cheese, and crisp them in avocado oil until golden.

Some nights you want something crispy, cheesy and a little spicy. Takeout is calling. These beat it, and they’re on the table before delivery would even leave the restaurant.

It’s one of the meals from our guide to what to eat when you’re too tired to cook, and it’s built the Clean Fit Fab way: real food, big flavor, and no seed oils.

Why these black bean quesadillas work on tired nights

  • Pantry ingredients. Beans, spices and cheese you probably have now.
  • Mashing the beans is the trick. It holds the filling together.
  • Avocado oil crisps them perfectly. It handles high heat with no seed oils.
  • Fresh pico makes it pop. It’s the contrast that makes it taste like a taqueria.

Black beans bring both plant protein and fiber. The Harvard Nutrition Source on protein explains why beans are such a strong protein choice.

The flavor: what makes it taste so good

Plain beans and cheese taste flat. So we bloom the spices in hot oil with onion and garlic first. That one step makes the filling smoky, savory and deep.

  • Cumin, chili powder and chipotle powder for smoke
  • Fresh garlic and onion sauteed in avocado oil
  • Mexican oregano and lime zest
  • Sharp cheddar or Oaxaca cheese for the melt
  • Pico de gallo with jalapeno and cilantro

What you need

Here’s a quick look at the ingredients. Exact amounts are in the recipe card below.

  • Bean filling: avocado oil, yellow onion, garlic cloves, ground cumin, chili powder, chipotle powder, Mexican oregano, black beans, lime, sea salt
  • Quesadillas: sprouted grain or cassava tortillas, sharp cheddar or Oaxaca cheese
  • Pico de gallo: Roma tomatoes, red onion, jalapeno, cilantro, lime, sea salt

Also, a note on fat: we cook with extra virgin olive oil, avocado oil, butter or ghee. They taste better, and they’re real food.

How to make black bean quesadillas

First, saute onion and garlic with the spices, then mash in the beans. Next, fill the tortillas with beans and cheese. Then crisp them in a skillet and stir together the pico. The full recipe card is below.

The spiced bean filling keeps for 5 days in the fridge, so black bean quesadillas become a 5-minute meal all week. Reheat cooked quesadillas in a dry skillet or air fryer so they stay crisp.

Frequently asked questions

Are quesadillas healthy?

They can be. With beans, real cheese, a clean tortilla and fresh pico, they’re a balanced, high-fiber meal.
