Smoky spiced sheet pan salmon with roasted sweet potatoes, crispy garlic kale and a lemon finish. One pan, about 34g protein.

sheet pan salmon

The short answer: This sheet pan salmon is a one-pan dinner with about 34g of protein. Sweet potatoes roast first, then salmon with a smoky garlic, paprika and cumin rub joins them with kale for the last 12 minutes, and lemon finishes it.

It’s Tuesday, you’re tired, and the last thing you want is a sink full of pans. So everything goes on one tray, the oven does the work, and you get a dinner that looks like you tried hard.

It’s one of the meals from our guide to starting an anti-inflammatory diet, and it’s built the Clean Fit Fab way: real food, big flavor, and no seed oils.

Why this sheet pan salmon works on tired nights

  • One pan, almost no dishes. Potatoes, fish and greens all roast together.
  • Staggered timing. Sweet potatoes get a head start, so everything finishes at once.
  • Salmon brings omega-3 fats. It’s one of the richest food sources.
  • Crispy kale. It roasts into salty, garlicky chips right next to the fish.

Fatty fish like salmon is one of the best food sources of omega-3 fats. The Harvard Nutrition Source page on omega-3 fats covers why they matter.

The flavor: what makes it taste so good

Salmon is rich, so it loves a bold rub. We mix smoked paprika, cumin, garlic and a little chipotle for smoky heat, then finish with lemon and fresh herbs so every bite tastes bright.

  • Smoked paprika, cumin and garlic powder in the rub
  • Chipotle chili powder for gentle smoky heat
  • Fresh garlic tossed with the kale
  • Lemon zest, lemon juice and parsley to finish

What you need

Here’s a quick look at the ingredients. Exact amounts are in the recipe card below.

  • Sweet potatoes: sweet potatoes, avocado oil, smoked paprika, sea salt
  • Salmon: wild salmon, extra virgin olive oil, smoked paprika, ground cumin, garlic powder, chipotle chili powder, sea salt, lemon
  • Kale: lacinato kale, extra virgin olive oil, garlic cloves, sea salt
  • To finish: fresh parsley

Also, a note on fat: we cook with extra virgin olive oil, avocado oil, butter or ghee. They taste better, and they’re real food.

How to make sheet pan salmon

First, roast the spiced sweet potatoes for 20 minutes. Next, push them aside, add the rubbed salmon and garlicky kale, and roast 10 to 12 minutes more. Then squeeze lemon over everything. The full recipe card is below.

Swaps and variations

  • Use wild cod, trout or arctic char instead of salmon.

  • Use broccoli florets or Brussels sprouts instead of kale, and add them with the potatoes.
  • Make it milder by skipping the chipotle and adding extra smoked paprika.

Make-ahead and storage tips

Leftover sheet pan salmon keeps in the fridge for up to 3 days. Reheat it gently in a skillet or a 300 degree oven, or flake it cold over greens for lunch.

Frequently asked questions

What temperature do you bake salmon on a sheet pan?

Roast it at 425 degrees F for about 10 to 12 minutes, until it flakes easily and reaches 145 degrees F inside.

Can I use frozen salmon?

Yes. Thaw it overnight in the fridge, then pat it very dry so the rub sticks and the edges brown.

How do I keep the kale from burning?

Add it with the salmon, not at the start, and toss it well with oil so every leaf is coated.
