It’s the end of the week and you need something warm, cozy and cheap. Two cans of beans and a bunch of kale turn into a bowl that tastes like an Italian grandmother made it. Like every dinner in this set, it uses five main ingredients. Oil, salt, pepper and dried spices don’t count, because they already live in your kitchen.

It’s one of the meals from our guide to 5-ingredient clean dinners, and it’s built the Clean Fit Fab way: real food, big flavor, and no seed oils.

Why this white beans and kale works on tired nights

  • Beans bring protein and fiber. So the bowl actually holds you.
  • Crisping the beans is the trick. It adds texture and a toasty flavor.
  • Kale holds up. It wilts but doesn’t turn mushy.
  • It costs very little. Beans are one of the cheapest proteins there is.

Beans and other legumes are some of the most affordable sources of fiber and plant protein. The Harvard Nutrition Source guide to legumes explains why they’re worth eating often.

The flavor: what makes it taste so good

Beans and greens can taste plain. So we let the beans sit undisturbed in hot olive oil until they blister, then bring in a lot of garlic, chili and smoked paprika before the lemon and Parmesan.

  • Six garlic cloves, thinly sliced
  • Smoked paprika and dried oregano
  • Red pepper flakes for warmth
  • Lemon zest and juice for brightness
  • Real Parmigiano grated from the block

What you need

Here’s a quick look at the ingredients. Exact amounts are in the recipe card below.

  • The 5 ingredients: cannellini beans, lacinato kale, garlic cloves, lemon, Parmesan
  • Pantry: extra virgin olive oil, smoked paprika, dried oregano, red pepper flakes, sea salt, black pepper, water

Also, a note on fat: we cook with extra virgin olive oil, avocado oil, butter or ghee. They taste better, and they’re real food.

How to make white beans and kale

First, crisp the beans in olive oil. Next, add the garlic and spices, then the kale with a splash of water. Finally, finish with lemon and Parmesan. The full recipe card is below.

Make-ahead and storage tips

Leftovers keep for up to 4 days in the fridge. Reheat in a skillet with a splash of water and a fresh squeeze of lemon.

Frequently asked questions

Are white beans and kale enough protein for dinner?

Each bowl has about 20g of protein. Add an egg or serve with sourdough if you want more.

Do I need to remove the kale stems?

Yes. Strip the leaves off the tough stems and tear them into bite-size pieces. The stems stay chewy.

Which white beans are best?

Cannellini are creamy and hold their shape. Great Northern or butter beans work well too.
