Dark Chocolate Tahini Stuffed Dates with Pepitas
No-bake chocolate stuffed dates: medjool dates filled with tahini, dipped in 70 percent dark chocolate, topped with pepitas and flaky salt. Already vegan.

The short answer
These chocolate stuffed dates taste like a candy bar and take 15 minutes with no oven. Each medjool date gets a spoon of tahini, a dip in 70 percent dark chocolate, and a sprinkle of pepitas and flaky salt. The chocolate, tahini and seeds each add iron, so two dates bring roughly 2 to 3 mg.

You want chocolate after dinner. Not a lecture, not a protein bar, just chocolate. These give you the real thing, wrapped around a caramel-soft date, and they happen to be good for you.
It’s one of the meals from our guide to iron rich foods that taste like dessert, and it’s built the Clean Fit Fab way: real food, big flavor, and no seed oils.
Why these chocolate stuffed dates work on tired nights
- Dark chocolate is an iron food. An ounce of 70 percent chocolate has around 3 mg, more than most people expect.
- Tahini adds more. A tablespoon of roasted sesame tahini brings about 1.3 mg, plus calcium and healthy fat.
- Pepitas on top. A sprinkle of pumpkin seeds adds crunch and a little extra iron.
- Dates do the sweetening. Fiber and potassium come along with the caramel flavor, so no added sugar is needed.
All of this is non-heme iron, so a few strawberries or an orange on the side help your body absorb more of it. The NIH Office of Dietary Supplements explains the vitamin C pairing.
The flavor: what makes it taste so good
A plain date is sweet. A date with tahini, salt, cinnamon and bitter dark chocolate is a dessert. The sesame cuts the sugar, the salt sharpens the chocolate, and the pepitas give you something to crunch.
- Roasted tahini stirred with cinnamon and a pinch of salt
- 70 percent dark chocolate melted with a teaspoon of coconut oil
- Toasted pepitas and flaky salt on top
- Optional: orange zest or a dusting of cardamom

Also, a note on fat: we cook with extra virgin olive oil, avocado oil, butter or ghee. They taste better, and they’re real food.
